Chicken... it's whats for dinner

I like to cook. I've never been in love with cooking and it's not like I get super excited about cooking dinner most nights but from time to time I'd stretch to say that I do enjoy finding new recipes and making something delicious.  You see, I LOVE food.  I mean.... I LOVE FOOD.  I'm not cultured enough to really be a foodie but I'd fit the wanna be foodie category quite well.  Recently I've had no real desire to cook and to be honest I think it has more to do with the time of year then anything else.  This time of year really lends itself to crockpot recipes and other one pot meals as when you don't get home till after dark I find it hard to get motivated to pull together any large elaborate dish.  I find that when all else fails I make chicken for dinner.  Why is that?  Why is chicken the go-to meal?  Is it only me?  I guess there are just so many things you can do with chicken and it's a pretty inexpensive main protean ingredient... well none the less I've really been trying to branch out and make something different with the boneless, skinless, chicken breasts sitting in my fridge.   Well I'm asking all of you for some ideas? suggestions? what's your favorite chicken dish? And of course I'm happy to share a few of mine! I think Silas would say this is one of his favorites- Sweet Potato and Chicken Enchiladas!  I found this recipe when I was looking for some gluten free meals to make when Silas was trying the gluten free thing for his allergies.  We just added some cooked chopped chicken to these and man are they good!  Although we didn't stick with a gluten free diet this recipe is one we keep making over and over!  One of my other favorites is a smoked cheddar and sage stuffed chicken with a green apple slaw.  Now this one takes a bit more prep but the good thing is you can really pull it all together in advance making it a really good entertaining meal.  I made this for Christmas Eve dinner this year and it's one that I often find myself almost craving!

Well tonight I think I'm going simple and back to the mexican side of things and trying out a new recipe i found for chicken and veggie Quesadilla. What are you having?

More Jackson, NH Family Portraits

 

It's amazing what bringing a new generation into the world does for a family. That first baby, grand-baby, neice or nephew is always the apple of everyones eye.

From the first time I talked to Katelyne I was excited about the shoot and when I arrived at the house that the family had rented up in Jackson for the week, immediately I knew this was going to be a fun group.  Everyone was smiling, happy and even willing to walk out into the knee deep snow for photos.

The 'apple' in this family is Katelyne's son and let me tell you he is one very cute little boy, with a whole family that just adore him.  There was no mistake that although this was a family portrait session it was truly about his sweet little face.

I had so much fun with this group and although it was cold I was laughing the whole time and really hope to see this crew again next year for an updated family photo!

Jackson, NH Family Portraits

 

When families get together it's always a special occasion.  When it's extended family  who have traveled from half way across the country and it's Christmas time it's truly a special occasion and one worth documenting!  When Meredith and Pat contacted me about doing some family photos for her and Pat's family while they were vacationing in Jackson over the holidays I was excited!  I hadn't seen them since their wedding a few years ago and having a chance to catch up was something I was greatly looking forward too.

The house they rented for the week had a fantastic view out to Mt. Washington and we tried to make the most of the cozy living room with a wall of glass looking at the view for their larger family group photos and followed those up with some more casual fun photos out in the snow!

Their family is full of nieces and nephews and brothers and sisters and all the kids were so well behaved that it give us a chance to get some really fun photos of the whole family as well as get them outside to get a few more fun photos as the sun was setting over the White Mountains! The kids were fearless while sledding down the hill and jumping in pig piles all over one another!  It's amazing how the cold just doesn't seem to bother the little ones.  They were so excited about Christmas, the snow and playing with their siblings that I think the runny noses and cold toes were not even a factor.   It's days like these, with that perfect afternoon winter sun light, that make me love winter portraits!

The New Blog is Here!

I am so grateful to Tara of Stupendous Designs for creating, in my opinion, the best blog ever!  Maybe I'm a little bias but I love the rustic, classic, cozy feel that my new logo and blog have!  It's just what I wanted and I'm so grateful to her for all her help!  If you need any design done she's the name I'd sing from the roof tops. And because every blog post needs a photo and because right about now I'm missing my trip to Scotland.

The Wentworth Wedding: Andrea & Christopher

When Andrea and I talked about her wedding and her vision there were two words that came up over and over again: snowy and Christmasy.  Going into the last week of November this year we had yet to cover the ground in that cold, white, fluffy stuff and I was so worried that Andrea was not going to get her dream wedding.  Well the wedding gods came through and not only did we have some of that white stuff on the ground for their wedding we had it falling from the sky! Andrea and Chris chose to have a small intimate wedding and it was perfect right down to the December weather she wanted!  I had so much fun with you guys and thank you for having me as a part of your day!  Although it was a bit cold I think you two got your beautiful winter wedding!
